Almost every Saturday I venture to our farmer’s market. It is a great opportunity to get extremely fresh produce, support local farms, and actually meet the farmers who have produced the food. It feels good to know that everything that purchase at our farmer’s market was grown or produced within 125 miles of where we live. This keeps money in our local economy and cuts down on the distance that food has to travel to get to my table.
This week I purchased:
Cauliflower
Kale
Baby Spinach
Carrots
Butternut Squash
Celeriac (Celery Root)
Napa Cabbage
Red Skin Potatoes
When I get home I make a list of everything I purchased and then come up with a food plan for the week. Knowing me, my plan sometimes changes as I actually go to cook the food, but for now, this is my plan for the coming week.
Cauliflower, Carrot, and Napa Cabbage Stir Fry with Peanut Sauce and Steamed Rice
Roasted Butternut Squash and Celeriac with Pumpkinseed-Parsley Pesto, Sauteed Kale and Brown Rice
Cauliflower and Spinach Saute with Tahini Sauce, Roasted Red Pepper Hummus with Carrot and Celery Sticks
Which of those meals do you think sounds the best?
